Coconut pudding recipe by Auyo’s cuisines

This delicious coconut pudding has a rich and satisfying taste.

Ingredients:
1 medium coconut
Cinnamon/ Cardamon Optional)
Corn flour
Sugar

Grate coconut and blend with water to get coconut milk.

Sieve the chaff using a cheesecloth and blend again.

Drain and put the milk in a clean pot, add cinnamon and cardamon, then boil on a low heat.

Don’t cover the pot as the milk will foam and overflow.

In a small bowl, mix one tablespoon of cornstarch with water, and pour the mixture on the boiling milk.

This will thicken the milk and give it a smooth consistency.

Add milk and sugar, off the heat and allow to simmer.

Garnish with grated coconut or coloured sugars.

Serve warm. I served mine with potatoe no bake cake.
