Cucumber Salad Recipe by Auyo’s Cuisines

Ingredients
1. 2 large cucumbers
2. Half a cup of thinly sliced onions
3. half a cup of thinly sliced tomatoes.

4. 2tablespoons lemon juice
5. 1 tablespoon olive oil
6. 1 teaspoon sugar (optional)
7. 1/2 teaspoon salt
8. 1/4 teaspoon black pepper

Instructions
1. In a large bowl, combine the sliced cucumbers, tomato and onion.
2. In a small bowl, whisk together vinegar, olive oil, sugar, salt, and black pepper.
3. Pour the dressing over the cucumbers and onions. Toss well to coat.
4. Let it sit for at least 10 minutes in the freezer to allow the flavours to blend.

Serve chilled….. enjoy your refreshing cucumber salad! I served mine with Chinese fried rice.
