Vegetable White Rice by Auyo’s Cuisines
This is our classic Nigerian white rice, elevated with vibrant vegetables for a healthier and more appealing dish.
Ingredients
– Rice
– Water
– Carrots
– Green peas
– Sweet corn
– Cucumber
– Green beans
– 1 teaspoon baking powder

Method
1. Parboil the Rice:
– Half-boil your desired amount of rice.
– Strain and rinse with room-temperature water.
– Allow it to cool and drain properly.
2. Prepare the Vegetables:
– Cut the carrots, peas, and green beans into small pieces.
– Add them to a pot with a teaspoon of baking powder.
– Boil until the peas are soft. The baking powder helps retain the veggies’ fresh colours.
– Drain using a colander and rinse with water.
3. Combine the Ingredients:
– Drain the sweet corn and cut the cucumber into small pieces.
– Add both to the boiled vegetables.
4. Cook the Rice:
– Heat a small amount of water and cook the parboiled rice until soft.
– Once the water is fully absorbed, add the vegetable mix and gently stir to combine.
– Avoid overcooking to maintain the rice’s texture and the veggies’ crunch.
