Stuffed Masa, by Auyo’s Cuisines

Ingredients for Masa
4 cups White rice
1 cup cooked rice
3 tablespoon sugar
1  tablespoon yeast
1 tablespoon baking powder
Vegetable oil

Ingredients for fillings
2 scotch bonnets
1 onion
Seasonings and spices
Shredded chicken or minced beef
Vegetable oil

Cooking Instructions

1. Soak white rice overnight, add a cup of cooked rice and blend till you get a smooth paste.

2. In a bowl, add to the rice mixture yeast and mix thoroughly until well-corporated.

3. Cover the mixture and leave it in a warm place to rise (I usually place mine inside the oven. It will rise within minutes).

4. When it has risen, add sugar and baking powder, and stir.

5. In a pan, add two tablespoons of vegetable oil, the shredded chicken or minced beef, and the grated scotch bonnets together with the grated onion. Add the seasonings and spices, and stir fry on low heat till it is cooked.

6. Set your masa pan on low heat, add a little oil, and put a portion of your masa mix in the pan.

7. Add  a tablespoon of the meat fillings

8. Add another scoop of rice mixture to cover the meat, and wait till golden brown before u flip to the other side.

9. Repeat the process for the remaining masa mixture till you are done!

10. Serve with tea, pap, or any drink of your choice.
