Fried rice recipe by Auyo’s Cuisines
Ingredients
Rice, vegetable oil, carrots, peas, green beans, green pepper, onions, red bell pepper (tattasai) and hot pepper (taruhu), chicken seasoning, baking powder, and turmeric
Method
Per boil, rice with salt and turmeric, drain, pour cold water,, and allow to cool. In a nonstick pot or pan, heat oil and add the Haruhi, tatta sai, seasoning, and onions; stir fry for about 5 minutes on medium heat, then pour the rice and continue stirring till everything is incorporated into the rice.
In a separate pot, pour in the diced carrots, green pepper, green beans, and peas, add water and baking powder, and allow to boil for five minutes. Drain and pour cold water over the veggies, allow to cool. This step is a restaurant hack they will never tell you because it’s what makes their Friedrice unique and superb. Doing this will make your Rice nonsticky, as opposed to frying the veggies together with the rice, which will cause the veggies to release water, therefore dampening it.

Also, boiling veggies in baking powdered water helps to maintain the fresh colour of the veggies; they will look as fresh as uncooked, but they are soft and cooked. Veggies usually change colours when boiled or fried without the baking powder.
After the rice is done and the veggies drain, combine them together and serve hot!
This method is a bit tiring, but trust me, your fried rice will have that unique taste and colour you’ve always wanted.
Hint;
-The use of a nonstick pot is a must, or use the nonstick pan and do it in batches.
-Use chicken seasoning, either Maggi or Knorr; any other seasoning will darken the rice.
-If you must add spices, use light-coloured ones, like fresh ginger and garlic.
